sage, turning into white peach, tropical fruit and grapefruit. Soft and full flavour with a long, savoury
and persistent minerality.
Food pairings: Pairs with all fish and shellfish recipes, cured meats, white meat like veal, chicken, rabbit and aromatic vegetables. Excellent with sushi and sashimi.
