We are proud to present the first Organic Ribolla Gialla to be produced in a modern and captivating way. This newly discovered regional variety has become a must in the well known italian “Aperitivo”.
The Ribolla Gialla can be distinguished by its slight but refined scent and by the sense of freshness present on the nose and on the palate. The structure is vibrant and lively and it normally has a reasonable alcoholic content in order to make the wine easy to drink.
This spumante version of the Ribolla can be contrasted with fat and greasy foods. Appetizers made of vegetables and raw fish (such as crustaceans and oysters) would be a perfect match! Another interesting try would be to pair this wine with marinades and deep fried vegetables. In these two last cases, the Ribolla is able to balance the greasy part by cleaning the mouthfeel with its carbon dioxide. Last but not least, the Ribolla matches with fish appetizers such as a slice of salmon trout laid on top of a bruschetta with some butter.
